All you need is two bags of white chocolate chips (I used Ghiradhelli), a box of Lucky Charms cereal, parchment paper, and sprinkles of your choosing. Any rainbow or green or gold combination would work perfectly.
Start by pouring about half of the box of cereal into a large bowl. Have a smaller second bowl set to the side. This first step is the most important. Have your young child or children sort all of the marshmallows from the cereal into the smaller bowl. This will buy you approximately 20-30 minutes of time, depending on their age and attention to detail. Scroll through Instagram, reheat your coffee in the microwave, browse through your latest catalog (you get the idea-and you’re welcome!). Next, pour your chocolate into a microwave safe container and microwave at increments at 50% power. Stir and repeat until the mixture is smooth. I had the kids add in a few drops of green food coloring before we poured this out over a sheet of parchment paper. After spreading out the warm chocolate across the parchment, decorate with marshmallows and sprinkles until you are happy with your chocolate/topping ratio. We placed ours in the fridge and it was set in less than 30 minutes. We broke ours into pieces and have been enjoying it all week. From start to finish this took us less than an hour, and I already know it’s now a tradition they will ask to repeat every year!
